FRIED WONTONS
Directions
Place the pork in a bowl and mix with all but the last 4 (sauce) ingredients . Set aside.
Combine the hoisin, fish sauce, soy sauce and minin. Taste for heat before adding to the pork.
Lightly beat an egg in a small bowl and place on the surface where you’ll be wrapping the wontons with a pastry brush.
Once you’ve opened the wrappers, keep the ones not in use under a damp towel so that they will not dry out.
Fill the wontons, brush the egg on the seams to close the wontons and fry in hot oil for 4 – 5 minutes, until golden brown and crispy and the pork or chicken is cooked through.
Serve with Honey Chili, Duck or Soy Sauce.

1 lb. ground pork (beef or chicken will work too)3 large green onions, diced3 cloves garlic, minced1 inch piece of fresh ginger, minced (or grated)1 bunch cilantro, chopped1/4 teaspoon cayenne pepper1 red Anaheim or Jalapeno pepper, minced2 tablespoons hoisin sauce1 tablespoon fish sauce2 teaspoons soy sauce1 tablespoon mirin1 package wonton wrappers — round or square1 eggPeanut or canola oil for frying
